Delicious yet light on the stomach
Method:
To make the coriander pest, roughly chop the chilies, coriander and nuts.
Place them along with the ginger and garlic, in a food processor and process until finely chopped.
With the motor still running, slowly add Soya Supreme Cooking Oil to make a paste.
Mix the pesto with beef and plenty of salt and pepper and 1 tbsp of lemon juice.
Toss well, cover and refrigerate for at least 2 hours.
Heat Soya Supreme Cooking Oil in a wok and stir-fry the onions for 2-3 mins. Remove and set aside.
Heat extra Soya Supreme Cooking Oil and stir fry the beef in batches over high heat. Toss constantly.
Add the onions, lime juice, sugar and toss well.
Spread this over the noodles or boiled rice and garnish with sliced onion and coriander
